Easiest Chocolate Chip Pumpkin Cookies11/14/12

 

 

Would you believe me if I told you these cookies were made with only 5 ingredients?

 

Well it’s true, and if your like me and love dangerously easy and yummy desserts. Then this is the dessert for you. Perfect for those work potlucks, family dinners, neighbor gifts, or just that needed sweet treat.

All the ingredients you need

I know what you’re thinking, theres no eggs, no oil, no flour! How can that possibly make delicious cookies. The liquid in the pumpkin is the perfect amount to make cookies, the cake mix has the dry ingredients all perfectly measured for you.

You’ll need:

  • 15 oz Canned Pumpkin
  • 1 Box of Spice Cake Mix (any brand works)
  • 1 bag of Chocolate chips 12 oz. (I used milk chocolate, but semi-sweet or dark work too)
  • 1/4 tsp Pumpkin Spice
  • 1/4 tsp Baking soda (Only needed to help with keeping the cookies from going flat due to climate)

 

Preheat your oven at 350°, you might want to do this a few minutes before since you will most likely be done and ready to bake before the oven is preheated. Mix Pumpkin, Spice Cake, Pumpkin Spice, and Baking Soda in a large bowl until it’s creamy and lump free.

Add in the chocolate chips, you can add more or less to taste I prefer lots of chocolate so I added the entire bag. Divide the batter into the sizes you prefer, you can make big ones or small ones. For the size in the above picture I used a regular ice cream scoop to keep them exactly even. Place on cookie sheet.

Bake at 350° for 15 minutes, give or take depending on your oven. Hopefully you have a good idea of how long it will take. The cookies should bounce back if lightly pressed similar to a cupcake when done. This recipe will make roughly 2 dozen medium sized cookies, give or take a few for size variations.
